Greenville, SC (March 17, 2022) — Holy Mōlli is now open at 11 S. Main St. in downtown Greenville, offering diners a new kind of fast-casual Mexican food.
The Mexican fusion restaurant from married couple Luis and Lydia Stark features ingredients inspired by their home in the Mexican state of Sinaloa, a region that famously celebrates fresh seafood, meat from local ranches and colorful veggies.
“We wanted to bring truly authentic ingredients and flavors to North America,” Lydia Stark said. “Our menu is a taste of our home and the traditions that made us who we are.”
The setup of the restaurant, with its line-style ordering system, will be familiar to anyone who’s dined at a Chipotle or Moe’s, but the Starks are out to redefine what fast-casual Mexican can be.
“These companies are representing our culture all across America, but in our minds, that’s not what Mexican food is,” Luis Stark said. “That’s why we decided to start our own restaurant that can truly represent our culture properly.”
The Starks have both worked for years in the restaurant industry, managing chains like Chipotle and Panda Express, and they’ve brought that experience to their own concept.
What’s different at Holy Mōlli is the love and passion they bring to their menu and ingredients.
Their custom-made Mexican sushi roll is just one example, paying tribute to the roadside taquerias and sushi stands in Sinaloa. Each roll is like a regular sushi roll, only larger and packed tight with a variety of Mexican ingredients, then deep fried and sliced in pieces.
“In Sinaloa, there are amazing taquerias and sushi places on the street, where the sushi is made right in front of you to order,” Lydia Stark said. “This is our way of bringing that tradition to a new audience.”
Other dishes include burritos, bowls, salads, tacos, nachos and quesadillas, with more familiar base ingredients like chicken (regular and spicy), steak, grilled veggies, shrimp and tofu. But Holy Mōlli also offers classic Sinaloa ingredients like birria, which is beef cooked low and slow to bring out the depths of flavor, and cochinita, a traditional Sinaloan pulled pork.
Diners can choose from countless toppings and sauces, including a variety of authentic mole sauces, ranging from queso to chipotle to jalapeno – and even chocolate.
“We’re committed to serve only the freshest, healthiest and authentic food,” Luis Stark said. “Diners have gotten used to a certain kind of fast-casual restaurant, but so many of those have become soulless and stale. We’re putting the unique and diverse flavors of our home front and center.”
Holy Mōlli also features Margaritas and different kinds of international beers.
The Starks are now in the process of franchising the Holy Mōlli concept across North America, but they are making sure their growth does not sacrifice quality. Their goal is to build an iconic and long-lasting brand that truly represents their culture.
“We couldn’t find this kind of food anywhere,” Luis Stark said. “So we decided it was only right that we make it ourselves.”
Holy Mōlli hours: Sunday through Monday from 11 a.m. to 9 p.m. and Friday through Saturday 11 a.m. to 2 a.m.
